Hyacinth Bean (Lablab purpureus) is a stunning and heat-loving vining plant that thrives in hot climates and adds beauty and function to your garden. This fast-growing vine produces vibrant purple stems, deep green leaves, and striking lavender-pink flowers that pollinators—especially bees and butterflies—absolutely love. After flowering, it forms eye-catching, glossy purple bean pods that are edible when cooked properly (young pods can be steamed or stir-fried, while mature beans should be boiled thoroughly). Hyacinth beans are not only ornamental but also a resilient food crop that can handle summer heat when other legumes slow down. This is a vigorous vining crop. For best results, plant in full sun by a trellis or fence.
****Mature Purple Hyacinth Bean seeds must be fully cooked before eating. Like many beans, they contain natural compounds that can be harmful if eaten raw or undercooked. Boiling the beans thoroughly helps break down these compounds and makes them safe to eat. Be sure to discard the cooking water after boiling.*****
PLANTING
Germination: 5-10 days
Seed Sowing Depth: 1” deep
Sowing: Direct sow the seeds under a trellis or veritical support, after all danger of frost has passed.
Harvest: To harvest and use similar to snap beans, harvest the pods while they are tender, no more than 4 inches long, before the beans start to swell inside the pods. Or allow the pods to stay on the vines until they are completely dried out. Then shell out the beans and store them for later use.
